Lamb Koftas are a long standing favourite Middle Eastern recipe! Made with lamb mince and various spices, this fresh take includes spicy mint harissa, to add a little heat.
700g minced lamb
2 tbsp Josh&Sue Mint Harissa
1/2 tsp ground allspice
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 cup pistachio nuts, very finely chopped
1 small onion, grated
3 cloves garlic, grated
1/2 cup flat-leaf parsley, finely chopped
Salt and pepper, to season
Fresh Pomegranate, to serve
Combine all the ingredients, except pomegranate and a small handful of flat leaf parsley, into a large mixing bowl and season with salt and pepper.
Mix to combine and form into 16 sausage shaped patties, around a bamboo skewer. Cover and refrigerate for 1 hour.
Preheat a barbeque or chargrill to moderately high.
Cook for 6-8 minutes or until browned on all sides and cooked through.
Sprinkle with some fresh pomegranate and flat leaf parsley. Serve with flat bread, and a little yoghurt with chopped cucumber if you wish.
